Job summary

Fontainebleau Las Vegas, LLC is seeking a Restaurant Operations Leader to oversee day-to-day FOH restaurant operations, ensuring quality, service, and cleanliness meet division standards.

You will supervise staff, manage service standards, control costs, coordinate with reservations and sales, and train Members on menu knowledge and policies. The role requires flexibility to work nights and weekends in a fast-paced, luxury setting.

Qualifications

• High School Diploma or GED required.
• 3+ years of prior food and beverage management experience.
• Food Handler’s Certificate for managers required.
• Strong communication skills.
• Knowledge of health and safety regulations.
• Must be willing to work nights and weekends.

Responsibilities

• Oversee day-to-day restaurant operations and ensure quality, service, and cleanliness meet division standards.
• Respond promptly to guests’ questions, requests, and complaints and resolve them effectively.
• Assist with supervision of staff and ensure compliance with procedures, policies, and standards.
• Maintain the concept, ambiance, and menu offerings in line with the brand vision.
• Ensure health and safety compliance and assist in emergency procedures.
• Review finances to meet budget guidelines and escalate recommendations as needed.
• Estimate beverage and operational supply needs and manage par stock.
• Provide ongoing training to Members on duties and menu knowledge.
• Coordinate with reservations and sales to manage restaurant obligations.
• Lead weekly FF&E checks and maintain cleanliness of dining rooms and storerooms.
