Job summary

The Cook at The Knickerbocker in Times Square prepares all food items according to standardized recipes for Restaurants, Room Service, Employee Cafeteria and Banquets, while maintaining the highest standards to produce an appealing and safe product.

This role requires maintaining cleanliness and sanitation in kitchen areas, following health regulations, and supporting all kitchen positions as needed to ensure timely service and consistent quality.

Qualifications

• High School diploma or equivalent; hotel or related field preferred.
• Culinary experience required.
• Flexible and long hours sometimes required.
• Medium work – lifting up to 50 lbs occasionally and 20 lbs frequently.
• Ability to stand during entire shift.
• Able to withstand hot and cold temperatures.
• Knowledge of menus and required preparation according to hotel standards.
• Proficiency in cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking.

Responsibilities

• Maintain cleanliness and organization of all storage areas.
• Prepare and pre-plate food according to standards before opening.
• Prepare and display buffet items to hotel standards.
• Ensure quality of fresh vegetables, fish, dairy and meat products.
• Maintain sanitary kitchen environment following safety guidelines.
• Prepare food for Banquets and Employee Cafeteria as directed.
• Assist in storage and rotation of food items per procedures.
• Support other kitchen positions as needed to ensure service.
