Fontainebleau Miami Beach is seeking an Assistant for the Chef de Partie to support daily kitchen operations while upholding HACCP standards and delivering high-quality prep. You will handle mise-en-place, recipe reviews, and maintain station cleanliness.

Qualifications

• Knowledge of statutory health and safety, sanitation, chemical usage, fire procedures and HACCP.
• Knowledge of all kitchen equipment operations.
• Ability to read, write, and understand English.
• Ability to perform basic/intermediate math skills.
• Ability to establish and maintain effective working relationships with management, staff and guests.
• Knowledge and compliance with policies, procedures, and daily directives.

Responsibilities

• Prepare mise-en-place in advance of the cooking process; review recipes; measure ingredients; wash, chop and portion ingredients.
• Prepare and handle food per HACCP guidelines.
• Check and clean refrigerators, trolleys, utensils, and kitchen equipment daily.
• Maintain kitchen area cleanliness and hygiene.
• Utilize leftovers to minimize waste under guidance of Chef de Partie or Sous Chef.
• Collect products from stores per HACCP guidelines and company policies.
• Assist with daily inventory and provide par levels to Chef de Partie.
• Perform other related duties as assigned.
