Job summary

Fontainebleau Las Vegas is seeking a Cook to support the Executive Chef in daily food preparation, plating, and high-standard execution for the restaurant. You will follow recipes, rotate stock by FIFO, and maintain cleanliness and safety in a fast-paced luxury setting.

The role requires 2+ years in a luxury property, knowledge of health and safety regulations, and the ability to work nights, holidays, and weekends. Training emphasizes HACCP compliance and teamwork in a high-volume kitchen.

Qualifications

• Two (2) or more years of prior relevant experience in a luxury high volume property preferred.
• Complete knowledge of health and safety regulations.
• In-depth skills and knowledge of all kitchen operations, especially large-volume production.
• Extensive kitchen technical knowledge and current culinary trends.
• Must be able to read, follow recipes and procedures.
• Excellent organizational skills; ability to work under time constraints and deadlines.
• Willing to work a flexible schedule including nights, holidays, and weekends.
• Work in a fast-paced, busy, and stressful environment with high call volume.

Responsibilities

• Follows and executes plate items according to company specifications.
• Communicates equipment issues to the chef.
• Dates, rotates food items according to FIFO.
• Maintain cleanliness and sanitation in culinary work areas.
• Adhere to health, safety, sanitation, HACCP and company policies.
