Job summary

Monarch Casino Resort Spa in Black Hawk, CO seeks a Chophouse Captain to lead dining room service and support the restaurant leadership team in delivering a polished, memorable fine dining experience.

You will guide servers, bussers, and food runners, ensuring timely delivery, accurate plating, and exceptional guest care while collaborating with culinary and beverage teams to maintain service standards across shifts.

Qualifications

• Previous fine dining service experience; experience as a captain, lead server, or in a similar service leadership role.
• Knowledge of formal dining etiquette, service sequencing, and wine and beverage service.
• Strong guest service, communication, teamwork, and organizational skills.
• Ability to guide team members and manage competing service priorities in a fast-paced environment.

Responsibilities

• Support restaurant management in coordinating daily dining room operations and maintaining fine dining service standards.
• Guide servers, bussers, and food runners to ensure accurate service, timely delivery, and consistent table presentation.
• Welcome guests, anticipate preferences, and respond promptly to requests and concerns, escalating issues to management when appropriate.
• Maintain knowledge of menu items, ingredients, preparation methods, steak selections, daily specials, and beverage offerings.
• Coordinate with culinary and beverage teams to maintain appropriate course timing and order accuracy.
• Assist with pre-shift briefings, communicating reservations, special occasions, menu updates, and service priorities.
• Inspect dining areas and service stations for cleanliness, organization, proper setup, and adequate supplies.
• Follow food safety, sanitation, responsible alcohol service, and company policies.
