Job summary

Monarch Casino Resort Spa in Black Hawk, Colorado, seeks a Chophouse Captain to lead dining room service and assist the leadership team in delivering a polished, memorable fine dining experience. You will guide servers and support staff, anticipate guest needs, and coordinate with culinary and beverage teams to ensure smooth service.

The ideal candidate has prior fine dining leadership experience, strong knowledge of etiquette and service sequences, and excellent guest relation skills.

Qualifications

• Previous fine dining service experience; experience as a captain, lead server, or in a similar service leadership role preferred.
• Knowledge of formal dining etiquette, service sequencing, and wine/beverage service.
• Strong guest service, communication, teamwork, and organizational skills.
• Ability to guide team members and manage competing service priorities in a fast-paced environment.
• Attention to detail and a professional approach to resolving guest concerns.

Responsibilities

• Support restaurant management in coordinating daily dining room operations and maintaining fine dining service standards.
• Guide servers, bussers, and food runners to ensure accurate service and timely delivery.
• Welcome guests and respond promptly to requests, escalating issues when needed.
• Maintain knowledge of menu items, ingredients, and beverage offerings.
• Coordinate with culinary/beverage teams to maintain timing and order accuracy.
• Assist with pre-shift briefings and communicate reservations and priorities.
• Support training and reinforce service procedures.
• Ensure cleanliness, organization, and proper setup of dining areas.
• Follow food safety, sanitation, and alcohol service policies.
• Assist with opening/closing duties and report equipment issues.
• Perform other duties as assigned.
