Job summary

Monarch Casino Resort Spa Black Hawk is seeking a Chophouse Captain to lead fine dining service in our Chophouse. The role partners with culinary and beverage teams to deliver a polished, memorable dining experience and to guide the service team with attentiveness and professionalism.

Candidates should have prior fine dining leadership experience, a strong knowledge of etiquette, and excellent guest service and communication skills.

Qualifications

Responsibilities

  • Coordinate daily dining room operations and uphold fine dining standards.
  • Guide servers, bussers, and runners to ensure accurate service and presentation.
  • Welcome guests and respond to requests, escalating issues when needed.
  • Maintain knowledge of menu items, ingredients, and wine/beverage offerings.
  • Communicate dietary restrictions to relevant team members.
  • Coordinate with culinary teams to ensure proper timing and order accuracy.
  • Assist with pre-shift briefings and service priorities.
  • Support training and onboarding of team members.
  • Inspect dining areas for cleanliness and proper setup.

The Chophouse Captain supports dining room operations by coordinating attentive, polished service and assisting the restaurant leadership team. This role guides the service team, anticipates guest needs, and works closely with culinary and beverage teams to deliver a well‑paced, memorable fine dining experience.

Responsibilities
  • Support restaurant management in coordinating daily dining room operations and maintaining fine dining service standards.
  • Guide servers, bussers, and food runners to ensure accurate service, timely delivery, and consistent table presentation.
  • Welcome guests, anticipate preferences, and respond promptly to requests and concerns, escalating issues to management when appropriate.
  • Maintain knowledge of menu items, ingredients, preparation methods, steak selections, daily specials, and beverage offerings.
  • Assist guests with food and beverage selections and communicate dietary restrictions and allergy concerns to the appropriate team members.
  • Coordinate with culinary and beverage teams to maintain appropriate course timing and order accuracy.
  • Assist with pre‑shift briefings, communicating reservations, special occasions, menu updates, and service priorities.
  • Support team member training through hands‑on guidance and reinforcement of service procedures.
  • Inspect dining areas and service stations for cleanliness, organization, proper setup, and adequate supplies.
  • Follow food safety, sanitation, responsible alcohol service, and company policies.
  • Assist with opening and closing duties and report equipment issues or safety concerns promptly.
  • Perform other duties as assigned.
Qualifications
  • Previous fine dining service experience; experience as a captain, lead server, or in a similar service leadership role preferred.
  • Knowledge of formal dining etiquette, service sequencing, food preparation terminology, and wine and beverage service.
  • Strong guest service, communication, teamwork, and organizational skills.
  • Ability to guide team members and manage competing service priorities in a fast‑paced environment.
  • Attention to detail and a professional approach to resolving guest concerns.
  • Ability to learn and use restaurant point‑of‑sale systems and follow established operating procedures.
  • Ability to meet applicable food handling and responsible alcohol service requirements.
  • Physical requirements: Ability to perform essential dining room duties, with or without reasonable accommodation, including prolonged standing and walking; bending and reaching; and safely carrying trays, service supplies, and dining equipment. Specific lifting requirements should be established through a role‑specific job analysis.
