Job summary

Highgate Hotels is seeking a Chef de Cuisine in Miami to support the Executive Chef and Sous Chef in delivering consistently high-quality cuisine and leading a dynamic kitchen team. You will manage menu plans, portion controls, inventory, and cost optimization while mentoring staff to maintain top-tier guest experiences.

The role requires extensive experience in fast-paced environments, strong leadership, and a passion for quality ingredients and local sourcing.

Qualifications

• High school or equivalent required; culinary degree preferred.
• 7–10 years of high-volume kitchen experience.
• Strong leadership and communication skills.
• Ability to operate in a high-energy environment and under pressure.

Responsibilities

• Ensure exceptional quality of ingredients, preparation, and plating.
• Control labor costs and manage inventory to maximize profit.
• Oversee staff as day-to-day operations and collaborate with management.
• Lead kitchen team, provide feedback, and supervise recipes and costs.
• Coordinate with restaurant and banquet operations for service efficiency.
• Recruit and train kitchen staff; schedule based on forecasted volumes.
