Job summary

Highgate Hotels in Las Vegas seeks a skilled Cook for our Renaissance property. You will prepare all food items across Restaurants, Room Service, Employee Cafeteria and Banquets following standardized recipes and hotel standards.

This role requires culinary experience, the ability to work long hours, and physical stamina to stand and move throughout shifts. You will maintain kitchen cleanliness and safety while assisting in multiple stations as needed.

Qualifications

• High School diploma or equivalent; hotel/related experience preferred.
• Culinary experience required.
• Flexible and long hours sometimes required.
• Ability to stand during entire shift.
• Able to exert up to 50 pounds; handle hot/cold environments.
• Thorough knowledge of menus and preparation per hotel standards.
• Proficient in charbroiling, poaching, deep-frying, sauté, braising, roasting, and par-cooking.
• Knowledge of herbs and spices and proper use of each.

Responsibilities

• Maintain cleanliness and organization of all storage areas.
• Complete necessary food and station preparation prior to opening to ensure guests are served promptly during operating hours.
• Prepare and display buffet food items according to hotel standards.
• Recognize quality standards in fresh vegetables, fish, dairy and meat products.
• Maintain a clean and sanitary environment with proper handling, storage, and sanitation.
• Prepare food for Banquets as specified by the Chef or Kitchen Supervisor.
• Prepare and service food for the Employee Cafeteria as directed by the Chef.
