Job summary

Highgate Hotels is seeking a skilled Cook to prepare all food items for restaurant operations, room service, employee cafeteria and banquets, following standardized recipes and maintaining cleanliness, sanitation and safety. You will work with the kitchen team to ensure timely service during opening hours, display buffet items to hotel standards, and support other kitchen positions as needed.

Qualifications

• High School diploma or equivalent; hotel experience preferred.
• Culinary experience required.
• Flexible with long hours.
• Medium work - able to lift up to 50 pounds occasionally.
• Stand during entire shift.
• Able to work in varying temperatures hot and cold.
• Know menus and preparation per hotel standards.
• Proficient in charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking.

Responsibilities

• Maintain cleanliness and organization of all storage areas.
• Prepare and portion foods according to recipes for dine-in, room service, employee cafeteria and banquets.
• Prepare and display buffet items to hotel standards.
• Recognize quality standards in fresh produce, dairy and meats.
• Maintain sanitary kitchen environment and safe handling practices.
• Assist in storage and rotation of food items per procedures.
• Be able to support any kitchen position as needed.
• Follow health department regulations and hotel safety standards.
