Qualifications

• Knife skills required for precise preparation and portioning.
• Solid understanding of cooking techniques across hot and cold lines.
• Culinary experience in restaurants, hotels, or catering environments preferred.
• ServSafe Food Handling Certification required by hire or within 45 days.

Responsibilities

• Train and direct Air Culinaire team members, ensuring food, packaging, labeling, and allergens are handled with accuracy and HACCP compliance.
• Provide feedback to Kitchen Management to monitor and improve quality.
• Assist in the butchering of meats and fish and participate in daily kitchen operations.
• Ensure all food preparations and presentations meet ACW specifications and quality standards.
• Maintain a safe, orderly, and sanitized kitchen; monitor temp-logs and use food safety tools and gloves.
• Perform preventive maintenance on kitchen equipment and mentor other team members.
• Assist in ordering, inventory, and other duties as assigned by the General Manager.
• Use Shipday for all order logistics and deliveries, including delivery photos and recipient names.
