Job summary

Maui Brewing Co. Kaʻanapali is seeking an experienced Butcher to join our Back of House team. The role focuses on cutting, trimming, and portioning meats according to our standards, while supporting daily kitchen production and service.

You will handle inventory using FIFO, maintain portion control, and operate butcher equipment safely, all within a fast-paced, team-centered environment at Maui Brewing Co. Kaʻanapali.

Qualifications

• Experience in high-volume kitchens or line cook roles.
• Knowledge of food safety and sanitation.
• Ability to multitask in a fast-paced environment.
• Strong teamwork and communication skills.
• Able to lift up to 50 pounds.

Responsibilities

• Cut, trim, and portion meats according to company specifications.
• Prepare proteins for daily kitchen production and service.
• Receive, inspect, store, and rotate inventory using FIFO procedures.
• Maintain consistent portion sizes to support quality and cost control.
• Operate butcher equipment safely and efficiently.
• Follow all food safety, sanitation, and HACCP standards.
• Keep the butcher station clean, organized, and fully stocked.
• Minimize waste and maximize product yield.
• Communicate inventory needs and quality concerns to management.
• Assist the culinary team with production and other duties as assigned.
