Job summary

The Cook for Kessler Collection hotels prepares all food items for Restaurants, Room Service, Employee Cafeteria and Banquets, following standardized recipes while upholding high standards of quality and presentation.

Responsibilities include maintaining clean storage and kitchen areas, timely prep before service, buffet display, and adherence to health and safety regulations. The role requires flexibility with hours and the ability to lift moderate weights and work in varied temperatures.

Qualifications

• High School diploma or equivalent is preferred.
• Culinary experience required.
• Flexible and long hours may be required.
• Medium work - Exerting up to 50 pounds of force occasionally, and/or 20 pounds frequently to lift, carry, push, pull, or move objects.
• Ability to stand during entire shift and withstand temperature variations.
• Knowledge of menus and preparation as per hotel standards.
• Proficiency in cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking.
• Knowledge of herbs and spices and proper use.

Responsibilities

• Maintain cleanliness and organization of all storage areas.
• Prepare all food and station prep before opening to ensure prompt service during operating hours.
• Prepare and display buffet items according to hotel standards.
• Recognize quality standards in vegetables, fish, dairy, and meat.
• Maintain a clean and sanitary kitchen environment.
• Prepare food for Banquets and Employee Cafeteria as directed.
• Follow hotel standard recipes and assist in other kitchen positions as needed.
• Breakdown buffets and kitchen line and store items properly after meals.
• Work banquet stations as scheduled by the Chef or Kitchen Supervisor.
• Operate and maintain cleanliness of all kitchen equipment.
• Maintain a “Clean As You Go” policy.
• Assist in storage and rotation of food items per procedures.
• Sign keys out and back in under supervision.
