Insomnia Cookies is seeking an Assistant Bakery Operations Manager in Chicago to lead daily bakery operations, coach staff, and ensure exceptional guest experiences. You will partner with the BOM, step in during absences, and drive staffing, inventory, and quality initiatives in a fast-paced environment.

The role offers growth toward running an Insomnia bakery, with hands-on leadership, strong teamwork, and a focus on execution, cleanliness, and guest satisfaction.

Qualifications

• 1+ year of leadership experience in retail, restaurant, hospitality, or another customer-focused environment.
• Experience coaching, motivating, and developing hourly team members.
• Strong communication, organization, and problem-solving skills.
• Ability to thrive in a fast-paced, team-oriented environment.
• Hands-on leadership style and willingness to jump into any bakery role when needed.

Responsibilities

• Partner with BOM to lead day-to-day bakery operations and deliver an exceptional guest experience.
• Lead the bakery independently when the BOM is away, keeping the team focused and operations running smoothly.
• Coach, motivate, and develop Shift Leaders and Cookie Crew members through real-time feedback and support.
• Support recruiting, interviewing, onboarding, and training to build a strong, fully staffed team.
• Help create schedules and manage labor to meet bakery and business needs.
• Support ordering, inventory management, product rotation, and shrink control.
• Maintain high standards for product quality, food safety, cleanliness, speed of service, and execution.
• Complete required operational and administrative tasks accurately and on time.
• Identify opportunities to improve bakery performance and implement solutions with BOM/Area leadership.
• Help create a culture of clear expectations, support, and accountability.
• Jump in wherever needed—from serving guests and baking cookies to supporting during peak hours.
