Job description

Job Overview:

The Assistant Cook is responsible for completing tasks as outlined in the job flow for the daily assigned position. This role involves retrieving, prepping, and preparing items according to daily production sheets and recipes, while adhering to all HACCP guidelines for food and physical safety.

Qualifications:

Required:

• Prior cooking experience in a healthcare facility
• Ability to read and interpret recipes
• Basic math skills

Preferred:

• High School Diploma/GED

Certifications and Licenses:

• ServSafe Food Handlers certification (preferred, not required upon hire; assistance provided within 90 days)

Scheduling Requirements:

• Availability from Sunday to Saturday, including every other weekend
• Flexible shift times, including:
• 5:30am-1:30pm
• 6:00am-2:00pm
• 8:00am-4:00pm
• 11:00am-7:00pm
• 12:00pm-8:00pm

Essential Functions:

• Complete tasks according to daily production sheets and recipes to meet service times for cafeteria and patients
• Communicate missing items to the Executive Chef or Supervisor
• Label all items with relevant information including name, date, and shelf life; label reusable containers appropriately
• Maintain cleanliness of work stations using proper sanitizing techniques; set up and maintain cleaning buckets
• Operate various kitchen equipment and demonstrate knowledge of cooking methods such as roasting, braising, baking, sautéing, frying, steaming, and boiling
• Follow personal hygiene, hand washing, glove use, and HACCP guidelines to prevent cross-contamination
• Gather ingredients needed for recipes
• Record production data and HACCP records accurately, including temperatures and times
• Use thermometers properly, including calibration; follow proper thawing techniques
• Store food in food-safe containers
