Job summary

Marina Bay Sands is seeking a seasoned Stewarding Manager to lead all aspects of the department, ensuring the highest sanitation and operational standards across outlets. The role involves managing schedules, training, performance reviews, and cross-department coordination to maintain smooth hospitality operations.

Candidates should have a Diploma/Degree in hospitality and at least five years in stewarding with supervisory experience, plus knowledge of budgeting and P&L.

Qualifications

• Diploma or degree in hospitality or a related field is preferred.
• Strong leadership and people-management skills.
• Knowledge of sanitation standards and budget oversight.

Responsibilities

• Maintain hygiene and sanitation in accordance with health standards across kitchen outlets.
• Direct all aspects of ware washing and cleaning of food prep areas.
• Inspect equipment and ensure it is well maintained and in good working order.
• Manage inventory and par levels for chinaware, glassware, and service wares.
• Prepare and manage weekly work schedules for stewarding team members and part timers.
• Oversee vacations, leave approvals, and overtime for team members.
• Conduct training and performance reviews; develop staff and handle disciplinary actions.
• Monitor labor costs and ensure efficient operation of the department.
• Coordinate with other hotel departments and maintain communications.
