Job summary

Belum Rainforest Resort is seeking a Station Manager for Food Preparation to lead a designated kitchen station, ensuring mise en place, recipe adherence, and high-quality plate presentation. The role involves supporting daily buffets, menus, and outdoor events at Pulau Banding.

You will train Commis Chefs, coordinate with F&B service on meal timing and dietary restrictions, and uphold strict hygiene and Halal standards across all prep areas.

Responsibilities

• Run and manage a specific station (e.g., Larder, Hot Kitchen, Pastry, or Malay Cuisine).
• Prepare, cook and present high-quality dishes per resort recipes and portion controls.
• Assist in daily buffets, set menus, themed outdoor BBQs, and packed lunches for rainforest excursions.
• Train and mentor junior kitchen staff and coordinate with service staff for timing and dietary needs.

Job description

1. Station Management & Food Preparation

• Section Operations: Run and manage a specific station (e.g., Larder, Hot Kitchen, Pastry, or Malay Cuisine), ensuring smooth preparation (mise en place) and timely execution during service.

• Culinary Excellence: Prepare, cook, and present high-quality dishes according to resort recipes, portion controls, and visual presentation standards.

• Menu Execution: Assist the Executive Chef / Sous Chef in executing daily buffets, set menus, themed outdoor BBQs, and packed lunches for rainforest excursions.

2. Stock Control & Remote Logistics

• Ingredient Management: Monitor daily section stock levels, ensuring optimal rotation (FIFO) and minimizing food waste—critical given the logistical lead times for mainland provisioning from Gerik or Ipoh.

• Requisitioning: Draft accurate daily requisitions for raw ingredients, butcher cuts, and fresh produce based on resort occupancy and meal bookings.

• Cold Storage Maintenance: Conduct regular temperature checks for walk-in chillers and deep freezers at your station, reporting any equipment faults immediately to Maintenance.

3. Food Safety, Hygiene & Sanitation

• HACCP & Halal Compliance: Enforce strict hygiene standards in line with Malaysian Food Safety guidelines and Halal requirements across all food handling and prep areas.

• Sanitation Practices: Direct daily station breakdown, deep cleaning, and sanitization of workstations, knives, cutting boards, and cooking apparatus.

4. Team Guidance & Kitchen Coordination

• Commis Supervision: Train and mentor Commis Chefs, kitchen helpers, and stewards on basic cooking techniques, station workflow, and safety protocols.

• Cross-Departmental Sync: Coordinate closely with F&B service staff regarding meal timing, special dietary restrictions (allergies, vegan, Halal), and expedition meal pack distribution.
