Job summary

Kerzner International operates One&Only Palmilla in San José del Cabo, Mexico, seeking a hands-on Stewarding Manager to lead the team across kitchens, stewarding areas, and banquet facilities. Qualifications

• Minimum 3-5 years of experience in a Stewarding Manager, Chief Steward, or similar leadership role in a luxury hotel or resort environment.
• Strong knowledge of food safety regulations, sanitation standards, and HACCP principles.
• Experience with FSMS audits and certifications.
• Proven ability to manage operating equipment inventories and replacement programs.
• Excellent leadership, coaching, and team development skills.

Responsibilities

• Organize and lead the Stewarding team, coordinating daily activities through supervisors and shift leaders.
• Recruit, interview, train, coach, and develop team members per policies and procedures.
• Ensure adequate staffing and monitor attendance, productivity, and grooming standards.
• Maintain cleanliness, sanitation, and food safety across stewarding and kitchen areas.
• Oversee setup, execution, and breakdown of banquets and events; coordinate with related teams.
• Manage inventories of china, glassware, silverware, and operating equipment; control breakage and loss.
• Prepare monthly schedules, manage expenditures, and ensure proper recordkeeping.
• Collaborate with Food & Beverage, Culinary, Engineering, Finance, Purchasing, HR, and Security.
