Job summary

One&Only Palmilla is seeking a Stewarding Manager to lead the stewarding team across kitchens, restaurants, bars, and banquets, ensuring world-class cleanliness, safety, and efficiency. The role requires strong leadership and hands-on operations in a luxury setting.

You will manage inventories, cost control programs, FSMS compliance, and audits, partnering with Culinary, F&B, Engineering, Purchasing, Finance and HR to elevate the guest experience.

Qualifications

• 3–5 years in Stewarding leadership in luxury hotel or resort.
• Strong knowledge of food safety, sanitation and HACCP.
• Experience with FSMS and audit processes.
• Budgeting, CAPEX planning, and expense management.
• Bilingual English and Spanish preferred.

Responsibilities

• Lead the Stewarding team and coordinate daily activities through supervisors and shift leaders.
• Ensure hygiene, sanitation, and food safety standards across stewarding and kitchen areas.
• Develop, implement and monitor cleaning programs and daily/weekly/monthly schedules.
• Coordinate equipment movement, storage, and inventory control for events and operations.
• Collaborate with Culinary, F&B, Engineering, Purchasing, Finance, HR, and Security departments.
