Job summary

Subway in Mexico City is seeking a Director of Restaurant Technology and Innovation to lead the evolution of the restaurant experience across Latin America and the Caribbean. You will partner with architects, operations, and global tech teams to define and pilot next-generation dining technology for guests and franchisees.

Based in Mexico City, you will drive the tech roadmap from POS to digital ordering, manage vendor relationships, ensure regulatory and data-security compliance, and build ROI

Qualifications

  • Bachelor's degree in Business, IT, Engineering or related field; MBA a plus.
  • 10+ years in restaurant technology, retail technology, or QSR operations, including franchised models.
  • Proven track record leading technology innovation programs from pilot through multi-market rollout.
  • Experience managing vendor relationships and negotiating technology contracts (POS, payments, kitchen equipment, delivery integrations).
  • Strong understanding of the LAC restaurant/retail landscape; direct experience working with franchisees strongly preferred.
  • Bilingual fluency in Spanish and English (written and verbal) required; Portuguese a plus.
  • Demonstrated ability to influence without direct authority across franchisees, vendors, and cross-functional global teams.
  • Experience owning a technology budget and building or leading teams, including matrixed or indirect teams.
  • Strong analytical and financial acumen; comfortable building ROI models and business cases.
  • Willingness to travel approximately 25–40% across the LAC region.
  • Based in, or willing to relocate to, Mexico City, Mexico.

Responsibilities

  • Define, build, and pilot the next generation of Subway restaurants for the region—creating a modern, technology-forward, digitally enabled restaurant experience for both guests and franchisees.
  • Define and execute the restaurant technology roadmap for LAC — including POS, kitchen display systems, digital ordering, kiosks, loyalty programs and delivery integrations — in partnership with Global Technology.
  • Identify, pilot, and scale in-restaurant innovation initiatives (equipment, automation, digital guest experience) that improve throughput, food safety, and franchisee profitability.
  • Own vendor management for regional restaurant technology suppliers, negotiating contracts and SLAs that work for independent franchisees across diverse LAC markets.
  • Ensure restaurant technology complies with local regulatory, data privacy, payment security (PCI), and fiscal/e-invoicing requirements across LAC markets, in partnership with Legal, Information Security, and Global Technology.
  • Partner with franchisees and BDAs/Master Franchisees to drive adoption of approved technology platforms and ensure compliance with brand standards.
  • Collaborate cross-functionally with Global Technology, Operations, Development, Marketing, and Supply Chain to localize and deploy technology solutions across Mexico, Central America, South America, and the Caribbean.
  • Build business cases and ROI models for new technology investments; present recommendations to LAC leadership and franchisee advisory councils.
  • Track emerging QSR technology trends (AI-enabled ordering, kitchen automation, loyalty/CRM platforms) and assess applicability to the LAC franchise system
  • Lead cross-functional project teams through technology rollouts, from pilot design through regional scale-up, minimizing disruption to restaurant operations
  • Establish KPIs and reporting to track technology adoption, uptime, and ROI across the region; report progress regularly to the VP, Growth (LAC) and LAC leadership.
