Mandarin Oriental Cristallo, Cortina, a luxury alpine resort opening in Winter 2026, seeks a Back of House & Stewarding Manager to lead all Stewarding and F&B back‑of‑house operations.

Based at Mandarin Oriental Cristallo, Cortina, you will drive pre‑opening readiness, establish procedures, recruit and train staff, and ensure cleanliness, safety and operational efficiency across kitchens, storage, and waste areas.

Qualifications

• Previous experience as Stewarding Manager, Chief Steward or Back of House Manager in luxury hotel or resort.
• Strong knowledge of stewarding, kitchen back‑of‑house operations and equipment management.
• Excellent knowledge of cleaning systems, sanitation procedures and chemical handling.
• Good understanding of HACCP, health & safety regulations and workplace safety.
• Experience managing inventories of china, glassware, silverware and operating equipment.
• Strong leadership with ability to coach multicultural teams.

Responsibilities

• Lead daily stewarding operations ensuring staffing, productivity and coverage across F&B areas.
• Maintain highest standards of cleanliness, organisation and presentation in back‑of‑house areas.
• Conduct regular inspections, address issues promptly and coordinate with Culinary & F&B teams.
• Oversee cleaning chemicals usage, storage and safety procedures.
• Manage budgets, purchasing, inventory and cost control for Stewarding.
• Lead training on procedures, PPE, safety and hygiene standards.
