About the Restaurant
We are a newly opened premium rooftop restaurant in Gurugram, offering Indian and Continental cuisine in a sophisticated rooftop setting. With a large indoor and outdoor seating area, the restaurant is designed around high-quality food, premium hospitality, cocktails/beverages and an elevated dining experience.
We are looking for an experienced Restaurant Manager who can take ownership of the day-to-day operation and help establish the restaurant as a strong destination in the Gurugram dining market.
Key Responsibilities
1. Overall Restaurant Operations
- Take complete responsibility for daily restaurant operations.
- Ensure smooth opening, service and closing procedures.
- Maintain consistently high standards across dining, bar, kitchen coordination and guest service.
- Monitor table turnover, reservations, walk-ins and peak-hour operations.
- Ensure the restaurant is always clean, organised and guest-ready.
- Coordinate closely with the Chef and bar team to ensure smooth service.
2. Team Management
- Recruit, train and manage restaurant staff.
- Create staff rosters according to business requirements.
- Ensure the restaurant is adequately staffed during peak and non-peak hours.
- Conduct daily briefings and communicate targets and service expectations.
- Monitor staff performance, attendance, grooming and discipline.
- Train staff on menu knowledge, upselling, service etiquette and guest handling.
- Build a professional, motivated and service-focused team culture.
3. Guest Experience
- Personally oversee the guest experience during busy periods.
- Handle guest complaints professionally and ensure quick resolution.
- Build relationships with regular and high-value customers.
- Ensure VIPs and special occasions receive appropriate attention.
- Monitor online reviews and guest feedback and identify areas for improvement.
- Maintain premium hospitality standards at every touchpoint.
4. Sales & Revenue
- Take responsibility for achieving daily and monthly sales targets.
- Monitor covers, average order value, table turnover and revenue.
- Train the team to actively upsell food, beverages, cocktails and premium dishes.
- Develop strategies to increase repeat customers.
- Work with the owners/marketing team on events, promotions and special nights.
- Identify opportunities to increase revenue during slower periods.
5. Cost & Inventory Control
- Monitor food and beverage wastage.
- Control portioning and unnecessary consumption.
- Maintain proper inventory and stock controls.
- Conduct regular stock checks with the kitchen/bar teams.
- Monitor complimentary items, voids, discounts and wastage.
- Help maintain food cost, beverage cost and overall operating expenses within targets.
- Identify areas where costs can be reduced without compromising guest experience.
6. Bar & Night Operations
- Oversee smooth coordination between restaurant and bar operations.
- Ensure responsible alcohol service and proper billing controls.
- Monitor bar stock and wastage.
- Coordinate music/DJ and rooftop operations when applicable.
- Ensure the atmosphere, music, lighting and service remain appropriate for a premium dining environment.
7. SOP & Compliance
- Establish and enforce restaurant SOPs.
- Ensure hygiene, food safety and cleanliness standards are followed.
- Maintain proper cash and billing controls.
- Ensure compliance with company policies and applicable regulations.
- Maintain daily operational reports.

The Restaurant Manager will be responsible for monitoring:

- Beverage cost %

Candidate Profile
We are looking for someone who:
- Has 5–8+ years of restaurant management experience.
- Has worked in premium dining, fine dining, luxury hotels or high-end standalone restaurants.
- Has strong knowledge of Indian and Continental restaurant operations.
- Has experience managing large teams and high-volume service.
- Understands restaurant P&L, food cost, beverage cost and labour cost.
- Is confident managing both front-of-house and kitchen coordination.
- Has excellent guest-handling and communication skills.
- Is commercially minded and understands how to drive sales, not just operate the restaurant.
- Is comfortable working evenings, weekends and holidays.
- Is energetic, organised and comfortable working in a newly opened restaurant where processes are still being established.
What We Expect From the Person
This is not a desk job.
The Restaurant Manager should be visible on the floor, especially during peak service, and should be able to identify problems before they affect the guest.
The ideal candidate will be someone who can build the team, establish systems, improve service, control costs and grow revenue while maintaining the premium positioning of the restaurant.
Salary
45,000–70,000 per month, depending on experience and profile, plus performance incentives linked to restaurant targets.
