Job summary

Raffles Bali is seeking a Chief Steward to lead the stewarding team in a luxury resort setting on Jimbaran Bay. You will ensure clean, sanitized, and well-maintained operating equipment across all outlets and banquets, while upholding hygiene standards and budgets.

Responsibilities include staff scheduling, training, and enforcing hygiene practices, HACCP compliance, and efficient department management to support premium guest experiences.

Qualifications

• Minimum of 3 years of relevant experience as Chief steward (or similar) in a hospitality operation.
• Strong hygiene knowledge and ability to train colleagues on hygiene practices.
• Solid knowledge of chemicals and cleaning agents and their safe use.

Responsibilities

• Plan staff schedules effectively according to business level to maximize productivity and control payroll costs.
• Adhere to operating budgets and ensure all expenses are managed according to policy.
• Monitor, report and control breakage and loss of operating equipment.
• Maintain HACCP program where implemented and ensure food & beverage areas comply.
• Ensure stewarding department is managed efficiently and outlets are supplied with clean equipment.
• Ensure kitchen utensils and cooking equipment are clean and dry at all times.
• Oversee overnight cleaning in kitchen, back of house, and restaurant floors per schedule.
• Assign training tasks to staff with documented appraisals and evaluate performance.
