Job summary

PTAMI is seeking an HAL - 1st Commis TAM to assist in pastry production within the Galley. The role requires adherence to pastry recipes, proper equipment handling, and maintaining a clean, safe workstation in a fixed term contract environment.

Candidates should have 1+ year experience in luxury hospitality or cruise settings, a National Certificate in Pastry, and English communication skills. Marlin's Test score of 60 is required; degree in culinary arts preferred.

Qualifications

• At least 1 year work experience in a cruise ship, hotel, or high-end restaurant.
• National Certificate in Pastry is required.
• Certification from an accredited advanced food safety program; VSP knowledge preferred.
• Ability to read, write and speak English.
• Marlin's Test score of 60 is required.
• Degree from an accredited culinary college or university is preferred.

Responsibilities

• Assist in the preparation of all pastry according to company recipes.
• Properly utilize, maintain, and return equipment and utensils to prevent damage, loss, or undue maintenance.
• Reports any malfunctioning equipment or furnishings to Pastry Chef.
• Follows guidelines and instructions established by Pastry Chef.
• Maintains a high level of productivity, cleanliness, and sanitation throughout shift.
• Responsible for lido prep, floating, and breakfast; may be assigned to any pastry station as needed.
• Meet or exceed daily job tasks.
• Meet or exceed using company resources correctly.
• Meet or exceed company recipes and SOPs are followed.
• Meet or exceed required trainings.
• Ensure proper maintenance of company property; keep workstation clean and presentable.
• Perform other job-related functions as assigned.
