Job summary

DDH Recruitment Ltd is seeking an experienced Sous Chef for a countryside hotel near Dover. You will deputise in the Head Chef's absence and ensure the kitchen staff are aligned with the day's requirements to deliver high-quality dishes.

The role requires a proven career progression, experience with 2 Rosette standards, and a hands-on approach to staff development, hygiene and service efficiency. Accommodation is provided, free of charge.

Qualifications

• Established Sous chef with good progression.
• Experience of working to 2 Rosette standards.

Responsibilities

• Deputise in Head Chef's absence.
• Ensure staff are familiar with day’s requirements.
• Ensure stocks are on hand at the right quality and quantity.
• Maintain fair discipline and courtesy toward staff.
• Keep timetables, leave rosters and attendance registers up-to-date.
• Adhere to hygiene regulations.
• Report maintenance problems timeously and follow up.
• Coordinate communications between restaurant and kitchen.
• Ensure correct orders are delivered to the appropriate tables.
• Check each dish for quality, quantity, presentation and temperature.
• Ensure dining room staff are ready for delicate dishes.
• Provide regular on-the-job training for staff.
• Attend seminars and training courses as directed.
• Develop knowledge of management methods for future advancement.
