Job summary

DDH Recruitment Ltd places a Head Chef at a historic Welsh hotel surrounded by parkland. You will lead a small team, delivering high quality dishes and maintaining Rosette-standard compliance with strict health and safety practices.

Responsibilities include menu planning, costing, stock control, and recording temperature/HACCP logs, while driving GP targets and ensuring smooth kitchen operations. Accommodation is provided on an all-inclusive basis.

Qualifications

• Must be a mature, professional Head Chef with ability to lead a small kitchen team.
• Thorough knowledge of Health & Safety legislation and maintaining proper records.
• Experience working to at least 1 Rosette standard.

Responsibilities

• Prepare food items to the standard required by the company and ensure quality output.
• Order, check in and store food items in accordance with the law and company policy.
• Regularly check temperatures of cooked and refrigerated foods.
• Maintain health, safety and hygiene records and COSHH/HASAP/RIDAR compliance.
• Rotate staff and ensure sufficient shift coverage.
• Assist in recruitment, induction and training of staff.
• Plan and implement new menus including costings and recipes.
• Aim to achieve or improve budgeted GP and stock levels.
• Drive high quality food and efficient kitchen operations.
• Undertake any other reasonable requests from management.
