Job summary

The Old Course Hotel, Golf Resort & Spa in St Andrews is seeking a Junior Sous Chef to join the Pastry department on a permanent full-time basis. You will craft exquisite dishes using locally sourced Scottish produce and oversee your section with support from senior colleagues.

You will assist with planning menus, train junior chefs, and ensure HACCP and clean, orderly kitchen practices across the department.

Qualifications

• Experience in a 5-star establishment with pastry focus.
• Ambition to move into a management role with greater responsibility.
• Solid knowledge of culinary terminology and techniques.
• Basic health and safety knowledge is desirable.
• SVQ 1 & 2 or MVQ or equivalent qualification.

Responsibilities

• Oversee pastry kitchen production and run own section to standard.
• Assist Pastry Sous Chef with planning and new menus.
• Supervise junior chefs, provide guidance and motivation.
• Maintain HACCP compliance and high cleanliness standards.
• Ensure understanding of menus and kitchen procedures.
