Overall Purpose of the Role

Assist in organizing and planning recipe specifications for Retail Kitchens across various levels, ensuring signature specifications are maintained. Support the culinary department in delivering high standards of food preparation, cooking, and service, adhering to Levy UK standards, contract requirements, and statutory regulations.

Key Accountabilities
Quality of Work
  • Supervise food preparation and cooking, ensuring quality, presentation, and minimal wastage.
  • Maintain hygiene standards and ensure food safety procedures are followed.
  • Ensure timely service and proper garnishing of dishes.
  • Control portions, storage, and wastage to manage costs.
  • Complete relevant paperwork, including wastage sheets and cleaning records.
  • Keep the kitchen and service areas clean and organized during service.
  • Conduct weekly stock takes accurately.
Cost of Food
  • Manage food costs effectively and ensure purchasing compliance.
  • Monitor gross profit and minimize wastage.
  • Coordinate with the team for sustainable and seasonal menu development.
Unit Cost
  • Develop labor schedules within budget and minimize agency/overtime costs.
  • Manage retail unit costs and ensure budget adherence.
Consumer Sales and Marketing
  • Implement company promotions and ensure product costing aligns with targets.
  • Stock retail areas adequately and respond promptly to customer requests.
  • Adhere to sustainability standards in menus and disposables.
Health and Safety
  • Complete required health and safety training.
  • Ensure compliance with hygiene and safety regulations.
  • Report hazards and maintain safety standards.
People Management
  • Communicate targets and support team development.
  • Monitor staff turnover and produce succession plans.
Business Excellence
  • Deliver consistent standards and uphold Levy UK core signatures and sustainability goals.
  • Complete all necessary paperwork and stock takes accurately.
