Job summary

AC Hotel by Marriott Glasgow seeks an Assistant F&B Manager to lead and coordinate weddings and events within The Collector’s Hall and Hazel Restaurant. You will support the F&B Manager with timelines, liaise with clients, vendors, and suppliers, and ensure flawless execution from setup to breakdown.

You will play a key role in delivering exceptional guest experiences, managing rosters, stock, and revenue tracking, and supervising front-of-house teams to maintain high service standards.

Qualifications

• Previous experience in events, hospitality, or wedding operations (preferred).
• Strong organisational, multitasking, and communication skills.
• A genuine passion for delivering memorable client experiences.
• Ability to work flexible hours, including evenings and weekends.
• High attention to detail and a creative, problem-solving mindset.
• Experience calling a pass or MCing events is a bonus, but not essential.

Responsibilities

• Planning and execution of weddings and events, ensuring every detail runs smoothly.
• Supporting the F&B Manager with timelines, schedules, and logistics.
• Liaising with clients, vendors, and suppliers to confirm all arrangements.
• Overseeing event setup and breakdown to the highest quality standards.
• Delivering excellent customer service before, during, and after events.
• Handling last‑minute changes with professionalism and a calm head.
• Assisting with rotas, operational meetings, stock management, and revenue tracking.
• Supporting the F&B Manager in the day-to-day operations of Hazel restaurant, bar, and dining areas.
• Supervising and motivating front-of-house teams to deliver consistent, high-quality service.
