Job summary

Six Senses Quexigal Palace is seeking a professional Sommelier to lead wine service, educate guests through seminars and tastings, and train restaurant and beverage staff. You will ensure impeccable wine presentation, proper decanting of aged vintages, and careful menu development aligned with Six Senses standards.

You will pair wines with cuisine, manage mise en place, and maintain inventory while upholding service excellence and global sensibilities.

Qualifications

• High school diploma or equivalent with 1–3 years sommelier experience in a full-service outlet or similar setting.
• Experience in beverage service and excellent knowledge of wines, spirits and mixed drinks.
• Alcohol awareness certification and/or food service permit or health/food handler card as required by local or state government.
• Fluent in English and Spanish.
• Valid authorization to work in Spain with visa/work permit as required.

Responsibilities

• Manage a station in the dining room by providing great wine service and increasing beverage sales.
• Conduct Wine Seminars and Wine Tastings/Dinners for guests.
• Conduct Wine Training Sessions for Restaurant and Beverage Hosts.
• Decant older vintages with traditional showmanship and standards.
• Inspect and update menus or wine lists; ensure stock is available.
• Pair wines with food to complement cuisine and preparation methods.
• Prepare mise en place to ensure proper service.
• Ensure prompt and efficient service of beverages per standards.
• Maintain knowledge of all outlet menus and day-to-day F&B activities.
• Suggest upselling when appropriate and manage wine pricing.
