Job summary

Mandarin Oriental Punta Negra Mallorca is seeking a Sommelier to join our Food & Beverage team. The Sommelier designs wine and beverage menus for each outlet, manages the beverage inventory, and drives beverage sales through expert recommendations and exceptional service.

Based at the Mallorca property, you will ensure high-quality wine service, lead a collaborative team, and work closely with the Head Sommelier and kitchen to elevate the wine experience in a luxury, multi-outlet setting.

Qualifications

• Degree in Hospitality Management or similar.
• 2–3 years’ experience in a similar role.
• Experience in fine dining and luxury hospitality.
• Ability to deliver superior customer service and lead a team.
• Experience with restaurant POS and cashiering procedures.
• Organised with strong administrative capability.
• Proven ability to lead a diverse team.
• Capable of planning large projects and events.

Responsibilities

• Design wine and beverage menus for each outlet.
• Maintain and manage beverage inventory according to stock proposals.
• Drive beverage sales through expert recommendations and service.
• Ensure wine service standards across outlets and decanting where needed.
• Collaborate with Head Sommelier and outlet managers to elevate service.
• Lead and develop colleagues; conduct regular trainings.
• Monitor and analyse wine/beverage sales hotel-wide.
• Coordinate sourcing with Outlet Managers and Materials Management.
• Provide recommendations based on guest preferences and occasions.
• Identify service improvements from guest feedback and incident reports.
