Job Description

A First Cook (Pastry) position has become available in the Kitchen department. Reporting to the Executive Pastry Chef & Assistant Pastry Chef, you are an enthusiastic, organized, service-oriented individual. This position requires flexibility and shift work, including early days, evenings, and weekends.

Responsibilities

  1. Ability to work independently with little supervision.
  2. Manage receiving, perform inventory, and order necessary supplies in accordance with establishment specifications.
  3. Be flexible under strict time frames.
  4. Recommend improvements in food preparation methods to obtain a better product.
  5. Research current trends in pastry and baking.
  6. Review daily production sheets and prepare necessary food items in accordance with standards, efficiently and on time.
  7. Adhere to standardized recipes and specifications to maintain consistency and meet standards.
  8. Understand bakers' percentages.
  9. Knowledge of mixing techniques for sponges, breads, mousses, etc.

Job Skills and Requirements

  1. Previous experience in viennoiseries and all breakfast pastry production.
  2. Relevant Baking and Pastry certificate or equivalent education and experience.
  3. Minimum 3-4 years baking/pastry experience in a high-volume production kitchen.
  4. Ability to assist in making special occasion cakes, sugar work, French pastries, confections, and showpieces.
  5. Red Seal certificate (journeyman’s papers) or recognized international equivalent.

This is a unionized position. In accordance with the Collective Bargaining Agreement, employees may become eligible for full-time status based on hours worked annually.
