Courtyard by Marriott Brussels offers an internship opportunity in our Kitchen team. You will be part of a progressive team of committed chefs aiming to provide quality food to a consistent standard.

This trainee role focuses on learning all aspects of food preparation and kitchen operations. During the internship, you will wash and cut vegetables, help cook soups, vegetables, fish and meat, and assist with sauces and mise en place under the supervision of the Chef de Partie.

Formación

• Knowledge of general culinary practices.

• French or English speaker.

Responsabilidades

• The work can be different depending on the party to whom it is assigned.
• Wash and cut vegetables or fruits.
• Cook soups, vegetables, fish and meat ordinary.
• Preparation of trim, sauces, and other funds as directed by the Chef de Partie of the section.
• Maintaining work area in cleanliness and hygiene including cold rooms, freezers and equipment in accordance with standards and local legislation.
• Receives and washes all vegetables and fruits in stocks and equity funds in the appropriate cold.
• Responsible for the preparation of fruit baskets for rooms following established controls and standards.
• Monitor rotation of fruits and vegetables daily and proper use of fresh fruits back rooms (FIFO).
• Prepares food orders and follows orders while ensuring a neat presentation and appropriate temperatures.
• Minimize loss of materials and ensure proper use of raw materials.
• Follow hotel fire alarm/evacuation procedures, rules and standards.
• Grooming standards must be followed (uniform clean, proper footwear, clean shaven).
• Demonstrate initiative and seek solutions to minor obstacles.
• Project a pleasant professional image to all contacts at all times.
• Performs other duties as assigned by the Chef de Partie, Sous Chef Restaurant, Sous Chef Executive or Executive Chef.
