Job summary

Chotto Matte is opening in Bondi and seeks an experienced Bar Manager to supervise daily bar operations, lead the bar team, manage beverage training and stock, and ensure high standards while maintaining cost control and profitability.

The role requires a minimum of 3 years in bar/restaurant management, strong leadership, and an RSA certificate. Applicants must have full working rights in Australia and be able to work in a fast-paced launch environment.

Qualifications

• Minimum 3 years' experience in bar and restaurant management.
• Strong bar leadership and team management skills.
• Good understanding of beverage service, stock control and operational bar standards.
• Current RSA (Responsible Service of Alcohol) certificate required.
• Energetic, enthusiastic and confident, with the ability to remain calm under pressure.

Responsibilities

• Lead and support the bar team, overseeing day-to-day running of all bar areas.
• Manage beverage training, stock control, ordering and cost control to Chotto Matte standards.
• Supervise bar set-up, cocktail specifications and presentation to ensure consistency and quality.
• Oversee recruitment, performance and development of the bar team.
• Ensure licensing, health, safety and hygiene requirements are followed at all times.
