Job summary

Chotto Matte is opening in Bondi and seeks an experienced Bar Manager to supervise daily bar operations, lead the bar team, manage beverage training and stock, and ensure high standards while maintaining cost control and profitability.

The role requires a minimum of 3 years in bar/restaurant management, strong leadership, and an RSA certificate. Applicants must have full working rights in Australia and be able to work in a fast-paced launch environment.

Qualifications

• Minimum 3 years' experience in bar and restaurant management.
• Strong bar leadership and team management skills.
• Good understanding of beverage service, stock control and operational bar standards.
• Current RSA (Responsible Service of Alcohol) certificate required.
• Energetic, enthusiastic and confident, with the ability to remain calm under pressure.

Chotto Matte is a globally recognised Japanese-Peruvian fusion restaurant group, with venues in London, Manchester, Toronto, San Francisco and Riyadh. We're bringing that energy to Bondi, and we're looking for an experienced, hands-on Bar Manager to join our opening team.

About the Role

As Bar Manager, you'll be responsible for the supervision and day-to-day running of all bar areas within the restaurant, including beverage training, ordering, stock control and delivery of Chotto Matte's bar and beverage service standards. You'll ensure the bar department consistently delivers high-quality products in line with company standards, while maintaining effective cost control and supporting profitability.
