Job summary

Novotel & ibis Balikpapan is seeking a Demi Chef to join our premium hospitality kitchen. You will work alongside Chef de Partie and Sous Chef to prepare high-quality dishes and develop your craft in a professional environment.

You will contribute to daily kitchen operations, cover multiple sections, and uphold food safety standards while maintaining a clean workstation and supporting senior chefs when needed.

Qualifications

• Previous experience as a Demi Chef or a Commis Chef advancing to the next step.
• Certificate III or IV in Commercial Cookery (preferred).
• Experience across kitchen sections: cold larder, pans, fryer.
• Strong HACCP knowledge and kitchen compliance.
• Excellent organisation and attention to detail.
• Genuine passion for food, hospitality, and learning.
• Ability to perform under pressure in a fast-paced environment.
• Strong communication and team-first attitude.
• Flexibility to work weekends and public holidays.

Responsibilities

• Prepare and present exceptional, restaurant-quality dishes with consistency and detail.
• Support day-to-day operations of a busy kitchen.
• Work across multiple sections and assist during peak service periods.
• Ensure highest standards of food safety, hygiene, and workplace safety.
• Assist with stock control, inventory management, and reducing food waste.
• Collaborate with a passionate team to deliver outstanding guest experiences.
• Maintain a clean, organised, and efficient workstation.
• Step into additional responsibilities and support senior chefs when required.
