Job summary

Mercure Melbourne Southbank, part of Accor, is seeking a passionate Full-Time Demi Chef to join our busy kitchen brigade. You will help deliver high-quality dishes and support senior chefs in daily operations within a fast-paced, high-standard hotel environment.

The role offers opportunities to work across kitchen sections, maintain HACCP standards, and contribute to a positive team culture while developing culinary skills.

Qualifications

• Previous experience in a hotel or high-volume kitchen.
• Strong technical cooking knowledge across techniques and styles.
• Formal culinary training or relevant qualifications preferred.
• Willingness to work a 7 day rotating roster including mornings, evenings and weekends.

Responsibilities

• Assist in the preparation and presentation of high-quality dishes.
• Work across multiple kitchen sections as required.
• Maintain cleanliness, food hygiene, and safety standards at all times.
• Support senior chefs with inventory and stock rotation.
• Ensure consistency and quality in every dish served.
• Contribute to a positive kitchen environment and train junior staff where needed.
