Job summary

The Grand Hotel in Frankston is seeking a motivated Casual Commis Chef to join Pegasus Leisure Group’s kitchen team. You’ll work hands-on from prep to pass in a fast-paced setting, supporting senior chefs and upholding strict food safety standards.

The role involves a rotating roster including nights, weekends and public holidays. Ideal candidates hold Cert III/IV in Commercial Cookery and a Food Safety certificate, with experience in a busy pub or bistro.

Qualifications

• Cert III or IV in Commercial Cookery is required or equivalent.
• Food Allergens and Do Food Safely Certificate or equivalent.
• Experience in a busy pub, bistro or high-volume kitchen.
• Solid understanding of basic cooking methods and recipe execution.
• Willingness to work a rotating roster including nights, weekends and public holidays.

Responsibilities

• Cooking and prepping menu items to high-quality standards.
• Jumping in to support senior chefs with prep, plating and service when things get busy.
• Keeping food safety and hygiene locked in at all times (non-negotiable).
• Running your section during service and keeping things moving on the pass.
• Keeping your station clean, organised and ready for the next wave of tickets.
