Job summary

IHG Hotels & Resorts in Australia is seeking a Sous Chef to lead morning kitchen operations for our Riverside Restaurant and In Room Dining, ensuring quality across breakfast and lunch support. You will mentor a diverse team, uphold HACCP standards, manage inventory and rostering, and collaborate with the Executive Chef on menu development.

Availability mornings on rotating rosters including weekends is essential.

Qualifications

• 3 years' experience in a culinary leadership role in a high-volume environment.
• Experience in buffet and ala carte operations with presentation skills for a 5-star environment.
• Proven ability to lead a multi-national team and grow talent.
• Knowledge in rostering, scheduling, and payroll for kitchen staff within hotel budgets.
• Strong communication to manage inter-department relationships.
• Guest-centric focus to excel in a premium hotel context.
• Ability to work under pressure with calm demeanour.
• Willingness to support other kitchens and special events.
• Experience in a 5-star international hotel brand is required.
• Must have Full Australian Work Rights.

Responsibilities

• Direct morning kitchen operations to ensure smooth breakfast and In-Room Dining service.
• Lead, mentor, and inspire a diverse culinary team.
• Own food safety and HACCP compliance.
• Manage kitchen inventory, ordering, and stock control.
• Conduct regular training including onboarding new colleagues.
• Address guest feedback in collaboration with Front-of-House leadership.
