Sofitel Melbourne On Collins is seeking a Breakfast Chef de Partie to lead the breakfast kitchen, delivering high standards, artful presentation and a luxurious guest experience in No35 restaurant.

You will manage a team, oversee the breakfast buffet, ensure food safety and HACCP compliance, and collaborate with the wider culinary team to sustain excellence across a busy hotel breakfast service.

Qualifications

• Certificate III in Commercial Cookery (or equivalent recognised culinary qualification).
• Minimum 3-5 years' post-apprenticeship culinary experience within a hotel, resort, or high-volume hospitality environment.
• Demonstrated experience working in a breakfast buffet operation, with the ability to manage high guest volumes while maintaining exceptional quality and presentation standards.
• Strong working knowledge and practical application of HACCP principles, food safety regulations, and kitchen hygiene standards.
• Previous experience leading a section and supporting the development of junior chefs.
• Excellent organisational skills and the ability to perform effectively in a fast-paced service environment.
• Full, unrestricted working rights within Australia.
• Availability to work early morning shifts, including weekends and public holidays.
