Job summary

Tuga Pastries Australia in Sydney is seeking a hands-on bakery production team member to craft our full signature range of artisan breads, including sourdoughs and specialty loaves. You will mix, knead, shape, prove and bake, monitoring fermentation and oven development to keep every bake consistent.

You'll maintain HACCP hygiene, keep a clean prep station, and support and mentor junior bakers as our production crew scales with new stores.

Qualifications

• Qualification in Retail Baking or equivalent hands-on trade experience.
• Experience in a fast-paced commercial bakery or high-volume production environment.
• Deep dough wisdom and intuition for fermentation, proofing, and baking science.
• Flexibility and reliability to work rostered shifts across a 7-day roster.
• Valid Australian working rights and current residence in Sydney.

Responsibilities

• Mix, knead, shape, prove, and bake sourdoughs and specialty loaves.
• Monitor fermentation and oven development, making adjustments to ensure consistency.
• Maintain HACCP hygiene protocols and a spotless, well-prepped station.
