Job summary

Honorbread, Bermagui's artisan bakery, seeks a hands-on Head of Bakery Production to lead daily bread, pastry and savoury output. You will balance baking with production planning, rostering and staff development, ensuring delivery to wholesale customers and cafés.

You will build a calm, respectful team culture focused on quality, safety and accountability, while collaborating with owners and the General Manager to grow the business.

Qualifications

• Proven experience in bakery production and hands-on baking.
• Experience leading a production team with clear expectations.
• Strong production planning and time management to adapt to demand.

Responsibilities

• Lead daily bread, pastry and savoury production to meet orders and standards.
• Plan quantities, schedules and workflows to minimise waste and shortages.
• Coach and develop bakers and support staff; manage rosters and hours within budget.
• Maintain food safety, allergen controls and cleanliness for audits.
• Coordinate with owners and managers to improve production and resolve issues.
