Role Context
The Kitchen Technician supports uninterrupted food and beverage operations by keeping critical commercial kitchen and refrigeration assets safe, reliable, and fully operational. The position combines planned maintenance with rapid fault diagnosis and repair across equipment that is essential to restaurants, production kitchens, storage areas, and other resort facilities. Working with limited supervision, the technician is expected to take ownership of assigned maintenance tasks from diagnosis through completion. Strong technical judgment is required when dealing with refrigeration circuits, gas systems, electrical controls, mechanical components, compressors, and associated utilities, particularly where equipment downtime could disrupt kitchen operations or guest service.
Key Responsibilities
- Inspect commercial kitchen and refrigeration equipment and identify mechanical, electrical, gas, or control-related faults.
- Carry out preventive, corrective, and condition-based maintenance according to equipment manufacturer instructions and property procedures.
- Maintain and repair walk-in freezers, refrigerators, ice machines, water coolers, and other commercial refrigeration equipment.
- Diagnose faults in industrial ovens, steam cookers, dishwashers, washers, dryers, and related kitchen appliances.
- Maintain electrical and gas-operated commercial kitchen equipment.
- Inspect gas piping, controls, connections, and air-to-gas mixture systems for correct and safe operation.
- Troubleshoot electrical circuits and equipment controls using wiring diagrams and technical manuals.
- Repair leaks and replace worn, damaged, or defective components.
- Install new commercial kitchen and refrigeration equipment when required.
- Verify equipment settings and ensure wiring and control components operate correctly following maintenance.
- Perform compressor replacement and associated refrigeration installation work.
- Complete soldering and brazing activities required for refrigeration repairs and pipework.
- Check refrigeration systems for reliable performance following repair or component replacement.
- Carry out assigned facilities maintenance tasks independently and complete work to the required technical standard.
- Support maintenance activities involving electrical, mechanical, carpentry, painting, kitchen equipment, and other property systems when operationally required.
- Assist with maintenance of hotel rooms, public areas, exterior resort features, and recreational facilities where assigned.
- Support fire and life safety and audio-visual system maintenance within the limits of technical competency.
- Attend equipment breakdowns and respond promptly to operational maintenance requests.
- Escalate complex technical faults, safety concerns, and recurring equipment failures to supervisors or managers.
- Participate in emergency maintenance activities affecting buildings, kitchens, utilities, or resort operations.
- Become familiar with plant rooms, service areas, kitchens, equipment locations, and the overall property layout.
- Perform assigned shift coverage to maintain technical support across operational hours.
- Observe health and safety requirements and use appropriate personal protective equipment for every task.
- Maintain safe working practices while handling gas, electrical, mechanical, and refrigeration systems.
- Keep work locations clean and organized before, during, and after maintenance activities.
- Report housekeeping or cleanliness concerns in technical and service areas to supervision.
- Maintain tools, diagnostic equipment, and maintenance resources issued for assigned work.
- Ensure measuring and testing equipment remains within required calibration periods.
- Record completed maintenance activities and outstanding technical issues accurately.
- Follow equipment manuals, property engineering procedures, and established maintenance standards.
- Assist with technical coaching and practical training of less experienced colleagues.
- Share equipment knowledge and troubleshooting methods with other members of the engineering team.
Ideal Profile
- Trade school qualification, technical diploma, vocational certification, or comparable technical education.
- Minimum 6 years of practical experience within a relevant facilities maintenance trade.
- Strong background maintaining commercial kitchen and refrigeration equipment.
- Hands-on experience with electric and gas-powered commercial catering appliances.
- Good working knowledge of refrigeration principles, compressors, piping, and controls.
- Experienced with walk-in freezers, commercial refrigerators, ice machines, ovens, steam cookers, dishwashers, and water coolers.
- Able to perform refrigeration soldering and brazing safely and accurately.
- Capable of replacing compressors and completing associated refrigeration maintenance work.
- Able to read and interpret electrical wiring diagrams, technical manuals, and equipment documentation.
- Understanding of gas controls, piping, and air-to-gas mixture requirements.
- Strong fault-finding ability across electrical, mechanical, refrigeration, and control systems.
- Comfortable completing assigned technical work without continuous supervision.
- Familiar with preventive maintenance and condition-based maintenance practices.
- Able to work rotating shifts and respond to emergency maintenance requirements.
- Strong awareness of occupational health, safety, and personal protective equipment requirements.
- Organized approach to tools, equipment, spare parts, and work areas.
- Willing and capable of coaching junior technicians and sharing technical knowledge.
- Previous experience within a hotel, resort, large commercial kitchen, or hospitality engineering operation is highly advantageous.
