Job summary

Delano Dubai, part of Ennismore, seeks a passionate Junior Sous Chef – Banquets to join its culinary team on Bluewaters Island. You will help create memorable dining experiences for intimate celebrations and large events with meticulous preparation and confident execution.

Work closely with banquet leadership to guide junior chefs, ensure food safety and allergen management, and support menu development, stock control and cost targets.

Qualifications

• Relevant experience as a Junior Sous Chef or a Chef de Partie ready for the next step, ideally in luxury hotel banquet operations.
• Strong culinary skills with ability to deliver consistent quality across high-volume events.
• Banqueting production, buffet service, plated dining and live cooking stations understood.
• Ability to prioritise prep, coordinate workloads and stay calm during changes.

Responsibilities

The Opportunity

We’re looking for a passionate & organised Junior Sous Chef – Banquets to join our culinary team at Delano Dubai.

From intimate celebrations to large events, you’ll help create memorable dining experiences through thoughtful preparation, confident execution & attention to detail. Working closely with the banquet culinary leadership, you’ll support daily operations, guide the team & ensure every dish reflects Delano’s commitment to quality.

What You’ll Be Doing

Support the planning, preparation & delivery of food for banquets, meetings, weddings & special events.

Supervise assigned kitchen sections, ensuring consistent flavour, presentation, portioning & timely service.

Lead kitchen operations in the absence of the Sous Chef, as required.

Work closely with the Banqueting Service team to coordinate event timings, last-minute changes & guest requests.

Support menu development, tastings & creative food presentations suited to different event styles.

Ensure dietary requirements & food allergies are communicated clearly & handled according to established procedures.

Guide & coach junior chefs, building their skills & encouraging a supportive team environment.

Assist with stock control, ordering & food storage, maintaining quality while minimising waste.

Monitor food safety, hygiene, temperature controls & kitchen cleanliness in line with hotel procedures & local requirements.

Support effective use of ingredients, equipment & team resources to meet operational needs & food cost targets.

Qualifications

What We’re Looking For

Relevant Experience: Previous experience as a Junior Sous Chef or an experienced Chef de Partie ready for the next step, ideally within luxury hotel banquet operations.

Culinary Expertise: Strong culinary skills & the ability to deliver consistent food quality across high-volume events.

Banqueting Knowledge: A good understanding of banquet production, buffet service, plated dining & live cooking stations.

Organisation & Adaptability: The ability to prioritise preparation, coordinate workloads & remain calm when event requirements change.

Team Spirit: A collaborative approach & confidence in guiding, supporting & developing junior chefs.

Food Safety: Sound knowledge of food safety, HACCP principles & allergen management.

Communication: Clear communication skills & a focus on creating exceptional guest experiences.

Qualifications: A culinary qualification is an advantage.

Flexibility: Availability to work varied shifts, including evenings, weekends & public holidays, according to event schedules.
