Job summary

Rixos Premium Dubai is seeking a Demi Chef de Partie to join our luxury kitchen at The Walk JBR. You will assist the Chef de Cuisine, supervise Demi/Commis chefs, and ensure mise-en-place, portion control and stock rotation for a high-volume hotel operation.

Fluent English, minimum 2 years cooking experience, strong leadership and organizational skills are essential in this fast-paced environment. You will uphold hygiene standards and participate in daily meetings and training as required.

• Strong organizational skills and ability to work in stressful fast paced environment.

Responsibilities

• Report punctually in proper uniform and name badge.
• Organize shifts with regard to mise-en-place production and service.
• Give tasks to Demi Chefs and Commis Chefs and ensure they are carried out properly.
• Write daily requisitions and transfers for stock control and approval by Executive Chef/Sous Chef.
• Maintain good colleague relations and motivate staff.
• Ensure training on a one-to-one basis is carried out and understood.
• Check daily food preparation for portion size, quantity and quality per recipe.
• Complete daily mise-en-place and food storage checklists.
• Attend daily and monthly meetings with Chef de Cuisine and Executive Chef.
• Report machinery and equipment issues to Chef de Cuisine and follow up.
• Keep information board updated on changes in Banquets or other info.
• Keep section clean and pass information to next shift.
• Record accidents and sickness in log book and inform Executive Chef.
• Check Demi/Commis Chefs on hygiene in their section.
• Assist in composing new recipes and menu ideas.
• Understand and adhere to company fire, hygiene and safety policies.
