Job summary

Rixos Hotels in Dubai seeks a Chef De Cuisine to lead daily kitchen operations across all outlets, ensuring top-quality production and strict adherence to hotel standards and brand guidelines.

You will plan and cost menus, supervise junior chefs, train staff, manage sourcing and inventory, implement HACCP, coordinate with Engineering for maintenance, and drive guest satisfaction through innovative, world-class cuisine.

Qualifications

• Culinary diploma or equivalent.
• Prior experience as Chef De Cuisine or similar role.
• Strong culinary and leadership skills.
• Knowledge of safety and hygiene protocols.

Responsibilities

• Oversee daily food production in the outlet following hotel standards.
• Follow standard recipes and plating guides at all times.
• Provide the Sous Chef with daily market list and control received goods.
• Assist and propose new cuisine concepts and menu costing.
• Ensure implementation and maintenance of standards of food quality, preparation and presentation.
• Coordinate with Engineering for equipment repairs and maintenance.
• Maintain HACCP and ensure cleanliness and safety in the kitchen.
