Fiorella's Jack Stack BBQ in Alma, MO is seeking a Smoke House Cook responsible for producing meats to meet daily needs, following JBQ Meats quality standards, procedures, and recipe specs. Strict adherence to USDA cooling procedures and maintaining cleanliness and sanitation of work areas and equipment.

You will operate a wood-fired grill, monitor fires, and ensure products meet lethality, proper cook times, and HACCP/SOP compliance.

Qualifications

Must be 18 Years of age.
3+ years grill experience with a wood fire preferred.
Knowledge of Southern Pride equipment preferred.
Ability to follow recipes with accuracy and speed.

Responsabilités

Completes opening duties according to USDA standards.
Responsible for all food quality in the plant from raw materials to finished goods.
Maintains sanitation and safety standards while training other pit cooks.
Ensures all products meet lethality and cool down according to USDA standards and HACCP/SOP Plan.
Cooks products to recipe specifications and quality standards.
Maintains controlled and safe fires and proper equipment use.
Prepares meats and sides per recipes and quality indicators.
Monitors equipment and maintains cleanliness of pit area and workstations.
Informs Leadership of shortages and communicates needs during busy periods.
Assists team members and minimizes waste to control food costs.
Breaks down workstation and completes closing duties.
Complies with GMPs, USDA, and sanitation regulations.
