Job summary

Komodo Las Vegas, a Groot Hospitality venue, seeks a Sushi Cook to lead daily sushi preparation across designated stations. Set up the sushi station for service, follow recipes, maintain quality and presentation, and collaborate with the kitchen team.

The role requires weekend and holiday shifts, strong communication, and the ability to thrive in a fast-paced environment. Prior sushi prep or line cook experience, plus a food handler's license and safety knowledge, are preferred.

Qualifications

• Minimum 1-year proven sushi experience.
• A food handler’s license.
• Sound knowledge of food health and safety regulations.
• The ability to stand for extended periods.
• The ability to work in a fast-paced environment.
• Excellent communication and leadership skills.
• Exceptional organizational, time management, and problem-solving skills.

Responsibilities

• Sets up Sushi station in time for service according to restaurant guidelines.
• Prepares all Sushi orders as directed in a sanitary and timely manner.
• Follows recipes, portions, and presentation specifications.
• Restocks items and takes inventory after service.
• Cleans and maintains station with safety and sanitation in mind.
• Properly uses and maintains all station equipment.
• Assists with cleaning and organization of kitchen and storage areas.
• Performs additional responsibilities as requested by Chef or Sous Chef.
• Deep understanding of professional cooking techniques and food knowledge.
• Adheres to safety, sanitation and food handling procedures.
• Previous prep or line cook experience.
• Professional communication skills required.
• Ability to take direction and work in a team.
• Ability to stay calm under pressure.
• Problem solving, self-motivation and organization.
• Commitment to quality of service and food & beverage knowledge.
• Awareness of company policies regarding benefits and schedules.
