Qualifications

• Experience as Sushi Chef or Sushi Cook in a high-volume restaurant.
• Expertise in sushi preparation and knife skills.
• Ability to multi-task in a fast-paced environment.
• Attention to detail in presentation, freshness, and quality.
• Knowledge of sushi-grade fish handling, storage, and safety practices.
• Willingness to learn new techniques and contribute to menu innovation.
• Able to stand for extended periods and lift up to 50 lbs.
• Availability to work nights, weekends, and holidays.

Responsibilities

• Prepare and execute sushi, sashimi, and maki rolls to Benihana’s standards.
• Understand fish quality, cutting techniques, and sushi preparation.
• Ensure consistent knife cuts, portions, and plating for all dishes.
• Follow food safety, sanitation, and HACCP guidelines for raw fish.
• Manage mise en place: prep ingredients, rice, and sauces.
• Maintain a clean, organized sushi station during high-volume service.
• Monitor inventory of seafood and produce to ensure freshness.
• Collaborate with BOH and FOH for a seamless dining experience.
• Engage with guests and offer sushi recommendations.
• Carry out tasks from Chefs and Kitchen Leadership with enthusiasm.
