Job summary

FAIRMONT is seeking a Sushi Cook for Toro Restaurant to support the Sushi Bar and deliver exceptional Asian cuisine. You will prepare menu items, maintain mise en place, and work with the team to ensure high-quality dining experiences.

Ideal candidates have culinary experience, ability to work under pressure, and a collaborative, guest-focused approach in a fast-paced kitchen environment. Knowledge of Wok Cookery and Sushi production, plus adherence to sanitation standards, are essential.

Qualifications

• Previous experience in the Culinary field is required.
• Journeyman's papers or international equivalent are an asset.
• Diploma/Certification in a Culinary discipline is an asset.
• Strong interpersonal and problem solving abilities.
• Highly responsible and reliable.
• Ability to work well under pressure in a fast paced environment.
• Ability to work cohesively as part of a team.
• Ability to focus attention on guest needs, remaining calm and courteous at all times.

Responsibilities

• Set up workstation with required mise en place, tools, equipment and supplies.
• Prepare all menu items following recipes and yield guides.
• Knowledge of Wok Cookery and Sushi production.
• Assist in creating new Asian Cuisine items for specials/new menus.
• Maintain cleanliness, sanitation and organization of assigned work areas.
• Adhere to state sanitation/Health regulations and resort requirements.
• Communicate any assistance needed during busy periods to the Jr. Sous, Sous Chef, or Chef de Cuisine- Production.
• Attend designated meetings.
